The caramel is Peters- I buy it in a 5 pound box. It's delicious and cuts nicely. I make 1/2 inch slices, then further cut them to about the diameter of a thick pencil- remember the chunky yellow ones from kindergarden?
Wrap them halfway down the pretzel rod, gently pushing the caramel on to the top of the rod, and then press the end of the caramel log on the pretzel.
Dip them in melted candy. I used Merckens cocoa dark here, drizzled with Merckens super white. Melted chocolate chips won't work for this application. The clover sprinkles are from Surfas.
Tips- I put the caramel wrapped rods in the freezer for a few minutes. Makes the chocolate candy coating adhere more quickly. Don't make these when it's hot out- the candy won't set for quite a while. Don't leave them in the back seat or trunk of a car.
